Ingredients

  • 3 pounds chicken pieces
  • 8 cups cold water
  • 1 carrot, chopped
  • 1 stalk celery, sliced
  • 1 onion, chopped
  • 1 teaspoon salt
  • 8 sprigs parsley
  • 1 bay leaf
  • 1 clove garlic
  • 4 tablespoons butter
  • 1/4 cup all-purpose flour
  • 1/4 teaspoon Worcestershire sauce
  • 1/4 cup heavy cream
  • 1/4 teaspoon ground ginger

Directions

  • 1
    Place chicken, water, carrot, celery, onion, salt, parsley, bay leaf and garlic in a large pot. Bring to a boil; reduce heat to medium. Simmer until chicken is cooked through, about 35 minutes.

    Remove chicken from broth. Melt butter in a large saucepan over medium-high heat; stir in flour. Cook, stirring, until golden. Add 3 cups broth and vegetable mixture.

    Add Worcestershire sauce, cream and ginger to saucepan. Cook sauce, stirring frequently, until slightly thickened, about 10 minutes.

    Place chicken and vegetable mixture on a serving platter. Remove bay leaf. Top with sauce.
